Potato Leek Soup

- 1 large onion, chopped
- 8 Yukon gold potatoes, peeled and cubed
- 1 Qt. Chicken broth (enough to just cover the potatoes)
- 4 Tbls. Sea or Kosher salt
Paired with: Iron Horse Chardonnay,
